Crust
2 cups desiccated coconut
1 cup dates – soaked for 20 min
Filling
1 avocado
1 dragonfruit
3 Tbl of organic agave nectar or raw
honey (optional)
½ cup of organic coconut oil
3 Tbl cacao butter (optional)
2 cups of dates (soaked for 2 hours or more)
juice of half a lime
2 passionfruit
1Tbl desiccated coconut
Directions
In the food processor process the desiccated coconut and dates
for the base and press onto a 9 inch pie dish. Press down firmly
and put it in the fridge to set.
For the filling, melt cacoa butter and coconut oil, thoroughly
process the remaining ingredients into a smooth creamy, unctuous
mousse. Spread onto pie crust and decorate with passionfruit
and desiccated coconut and eat right away or place in the fridge
for later.
